**Aging meat before it is cut is not required for bison meat. However,
there is normal hanging time of 4 days to 2 weeks. Prime age for harvesting
bison is 24-30 months.

Most
roast are packaged in 1 1/2 lb. packs to 5 lb. packs. Our steaks are
packaged in 1 lb. packs to 2 1/2 lb. Packs.
Ground Bulk is in 1 lb., 2 lb. And 5 lb. packages. The Ground patties
come 4 to a package average weight of each patty is about 1/4 lb.
Per patty. Sausage is package in 8 to a package, and the Bulk Sausage
is in 1 lb. Packages.
